Ingredients

cheese- or meat-filled tortellini

3 cups

broccoli florets

¼ cup

olive oil

2 tablespoons

red wine vinegar

1 tablespoon

grainy mustard

2 cloves

garlic, minced

2 teaspoons

honey

2 teaspoons

dried basil

½ teaspoon

salt

small red onion, chopped

scallions, sliced into ½-inch pieces

½ pint

cherry tomatoes, halved

¾ cup (3 ounces)

shredded Romano

Directions

  1. Prepare the tortellini according to the package directions. Add the broccoli during the last 3 minutes of cooking. Rinse the pasta and broccoli under cold water; drain.
  2. In a large bowl, whisk together the oil, vinegar, mustard, garlic, honey, basil, and salt.
  3. Add the tortellini and broccoli, onion, scallions, tomatoes, and cheese. Toss to coat well with the dressing. Serve the salad immediately or refrigerate it for up to 24 hours.
